2 Cups Of Pinot Noir
2 Cups Of Dried Cherries
1 Red Onion, Peeled And Minced
1/2 Cup Of Brown Sugar
2 Tablespoons Of Grated Fresh Ginger
Pinch Of Salt
1/2 Cup Of Red Wine Vinegar
Toss all ingredients in a deep pot, bring to a simmer.
Continue cooking, as the liquid evaporates and the flavour concentrates
When most of the liquid it’s gone and the mixture is thickened it is done!
Refrigerate until needed OR preserve in canning jars (250 ml x 4)
Process in canner for 15 minutes, then turn off heat, remove canner lid and let cool x 5 minutes.
