1 3/4 Cups Of Gluten Free Flour
2 Tablespoons Of Baking Powder
1/4 Teaspoon Of Cinnamon
1/2 Cup Of Softened Butter
1 1/4 Cup Of Brown Sugar
2/3 Cup Of Apple Juice
1 1/2 Cups Of Peeled Cored And Diced Apples Of Your Choice
1/2 Cup Of Raisins
1/2 Cup Of Lightly Toasted Coarsely Chopped Pecans
Preheat then oven to 350 degrees Fahrenheit.
Butter a springform baking pan and line the bottom with parchment paper.
Whisk the flour, cinnamon and baking powder in a bowl.
With an electric mixer, cream butter and sugar.
Add the eggs, one at a time, beating until smooth.
At low speed, stir in dry ingredients alternately with apple juice until smooth.
Using spatula, fold in the apples, raisins and pecans.
Spoon mixture into baking pan, soothing the top gently.
Bake for 1 hour, till your tester comes out clean.
Let cake cool completely on wire rack.
Run blade of knife between cake and pan.
Unfold the cake onto the rack.

1/2 Cup Of Light Brown Sugar
Beat together in an electric mixer till smooth and creamy.
Spread on top of the cooled cake.
