Berry Chia Seed Breakfast Pudding

This pudding is a fantastic treat that you can have as a dessert or for breakfast. I’ve tweaked the recipe a bit, but the original version came from Dr. Mark Hyman’s book The Blood Sugar Solution 10-Day Detox Diet.

Berry Chia Seed Breakfast Pudding Recipe

2 Cups Of Raspberries Or Blueberries, Divided – I much prefer raspberries!

3/4 Cup Coconut Milk – Full Fat

1/4 Teaspoon Of Sea Salt

1/2 Teaspoon Of Real Vanilla Extract

1/2 Teaspoon Of Cinnamon

1/2 Cup Of Chia Seeds

1/2 Cup Of Shredded, Unsweetened Coconut

2 Tablespoons Of Hemp Seeds

1/4 Cup Of Walnuts, Crushed

Blend 1 cup raspberries or blueberries with coconut milk in a blender.  Add salt, vanilla, cinnamon, and chia seeds to a bowl.

Pour in raspberry or blueberry mixture and stir to combine. Seal in an airtight container in the fridge for 12 hours or overnight.

When ready, give pudding a stir. Divide into 4 small bowls and top with coconut, hemp seeds, walnuts, and remaining berries.

Makes 4 servings.
