Ingredients
500 Grams Of Ground Beef
1 1/2 Cups Of Shredded Tex-Mex Cheese
Homemade Taco Seasoning *See Below For Recipe Or 1 Package Of Store Bought Taco Seasoning Mix
1 Cup Of Long Grained Rice, Uncooked
1 Cup Of Frozen Mixed Vegetables – Carrots, Beans And Corn
1 Cup Of Nana Pat’s Spicy Salsa Or Store Bought Salsa
1 Cup Of Chicken Broth
Method
Heat the oven to 375 degrees Fahrenheit.
Brown beef in a skillet.
Add half a cup of cheese, reserve 1 cup.
Add all the remaining ingredients and stir gently.
Spoon into a greased 13×9 baking pan.
Cover with foil and bake for 45 minutes.
Remove the foil, top with the remaining cup of cheese.
Bake, uncovered for 5 minutes.
Top each serving with a spoon of Salsa, mashed Avocado or a dollop of Sour Cream.
Yields: 6-8 servings.
Homemade Taco Seasoning
2 Teaspoons Of Chilli Powder
1 1/2 Teaspoons Of Cumin
1/2 Teaspoon Of Paprika
1/2 Teaspoon Of Red Chilli Flakes
1/2 Teaspoon Of Salt
1/4 Teaspoon Of Garlic Powder
1/4 Teaspoon Of Onion Powder
1/4 Teaspoon Of Dried Oregano
1/4 Teaspoon Of Black Pepper
Mix all the ingredients together in a small bowl and store in an airtight container until ready to use.
