Nana Pat’s Italian Meatball Soup


1 Bag Of (Thawed) Frozen Cooked Gluten Free Italian Meatballs

OR 1/2 Kilogram Of Homemade Gluten Free Cooked Italian Meatballs

2 1/4 Cups Of Beef Broth

1 Cup Of Water

1 Can Or 2 Cups Of Diced Tomatoes With Garlic And Oregano

1 Jar Of Italian Spiced Tomatoes

1/2 Cup Of Strained Cooked Tomatoes

1 Can Of Drained And Rinsed Kidney Beans

1/2 Diced Sweet Green Pepper

1 1/2 Teaspoons Of Italian Seasoning

2 Cups Of Gluten Free Penne Pasta

1/2 Bag Of Fresh Baby Spinach

1/3 Of Cup Shredded Parmesan Cheese


Mix all ingredients except for the Parmesan Cheese in a deep pot.

Cover and cook on low for 8-10 minutes.

Garnish each individual serving with the Parmesan cheese.

Yields 6 servings.

Serve with my homemade Gluten Free Jalapeño Cheddar Cornbread.
