Christmas Ginger Crackle Cookies


2 1/4 Cups Flour

2 1/4 Teaspoons Ground Ginger

1 1/4 Teaspoons Baking Soda

1 Teaspoon Cinnamon

1/4 Teaspoon Ground Cloves

1/2 Teaspoon Salt

3/4 Cup Softened Butter

1/2 Cup White Sugar

1/2 Cup Light Brown Sugar

1 Egg

1/3 Cup Fancy Molasses

Added White Sugar For Rolling Cookies


Preheat oven to 350 Fahrenheit.

Line two baking sheets with parchment paper.

Whisk together dry ingredients.

In an electric mixer, beat butter, 1/2 cup white sugar and brown sugar until light and fluffy.

Beat in egg and molasses.

Beat in flour mixture at low speed.

Scoop out and roll portions of the dough into 1 tablespoon size-balls.

Coat with the white sugar.

Arrange two inches apart on the baking sheet.

Bake for 10minutes.

Dust lightly with white sugar.

Cool for 5 minutes, then transfer to cooling rack.

Yield: 36 cookies
