Ingredients
6 Potatoes – 2 Pounds, Peeled & Thinly Sliced, Use A Mandolin If Possible
1/3 Cup Thinly Sliced Cooking Onions
3 Tablespoons Butter
3 Tablespoons Gluten Free Flour
1 1/2 Teaspoons Salt
1/2 Teaspoons Black Pepper
2 Cups Milk
1 1/2 Cups Grated Mature Cheddar Cheese
Method
Melt butter over medium heat.
Add flour, salt and pepper.
Cook, stirring for about 1 minute.
Gradually add the milk, stirring constantly, about 5 minutes until mixture is boiling and thickened – add 1 cup of the grated cheese.
Arrange 1/3 of the slices of potato into a greased 9 inch baking dish.
Pour 1/3 of sauce over, then layer with 1/3 of the onions.
Repeat the layers twice.
Scatter the remaining 1/2 cup of the grated cheese over the top of the potatoes.
Preheat oven to 350 degrees Fahrenheit.
Bake potatoes covered for 45 minutes.
Uncover and bake a further 30 minutes, until potatoes are tender and lightly browned.
Serves 8
