Preheat Oven To 325 Degrees Fahrenheit
1/2 Cup Granulated Sugar
4 Teaspoon Cinnamon
1 1/2 Teaspoon Ground Ginger
3/4 Teaspoon Nutmeg
1/2 Teaspoon Ground Cloves
1/2 Teaspoon Cayenne
2 Egg Whites
5 Cups Pecan Halves
In small bowl, combine sugar, cinnamon, ginger, nutmeg, cloves, cayenne
In large bowl, whisk egg whites until fluffy-stir in pecans, turning to coat.
Sprinkle with sugar mixture, toss with spoons, to coat the nuts evenly.
Spread onto 2 baking sheets, lightly sprayed with Pam
Bake at 325 degrees for 30 minutes
Switch trays halfway through baking.
Bake until the nuts have a crisp coating and are fragrant.
