Tourtiere Is A Traditional Pie From Quebec Which Is Enjoyed After Christmas Eve Church Service



Prepare Pastry For A 9 Inch Pie Top And Bottom Crusts

The Wrap In Cling Wrap In 2 Portions And Place In Refrigerator For At Least 1 Hour

* Option – Use Prepared Pastry Sheets From The Freezer Section Of Your Grocery Store  Like Tenderflake Pastry

Tourtiere Ingredients

1 Tablespoon Olive Oil

1 Tablespoon Butter

1/2 Pound Ground Beef

1/2 Pound Ground Veal

1/2 Pound Ground Pork

Salt And Fresh Ground Pepper

4 oz. Cremini Mushrooms, Finely Chopped

1 onion, Finely Chopped

3 Minced Garlic Cloves

1 Teaspoon Ground Allspice

1 Teaspoon Cinnamon

1/8 Teaspoon Ground Cloves

1/8 Teaspoon Ground Nutmeg

1 Small Yukon Gold Potato , Peeled And Grated

1/2 Cup White Wine

Tourtiere Method

Heat a large skillet on medium heat with the oil and butter.

When butter has melted, ad the ground meats-season with salt and pepper.

Cook, stirring frequently until the meat is browned, and just cooked through-about 8-10 minutes.

Add mushrooms, onion, garlic, allspice, cinnamon, cloves and nutmeg, along with the grated potato.

Cook, stirring occasionally, until the vegetables have softened, about 5-10 minutes.

Add the white wine and cook until the mixture is dry, 5-10 minutes more.

Taste and adjust seasoning.

Let cool completely.

Preheat oven to 450 degrees Fahrenheit.

Lightly flour work surface and roll out the first pastry round into a 11 inch circle – if pastry is too soft, pop it into the freezer for 5-10 minutes.

Fit the pastry into the bottom of your 9 inch pie plate.

Spoon Tourtiere filling over the top.

Brush edges of pie crust with a little egg wash – one egg yolk mixed with a little cold water.

Roll out second pie round.

Cover the Tourtiere with the top pastry, pressing edges to seal and pressing the edges together to seal it.

Brush the top with egg wash.

Score the top of the pastry a few times with a fork, to allow the steam to escape.

Use remaining pastry bits to cut our decorative Christmas decorations like wreaths or Christmas treats and place them on the top of your pie, brush them with egg wash as well.

Bake Tourtiere for 15 minutes then reduce oven heat to 350 degrees Fahrenheit and continue to bake for about 35 minutes.

Let the pie cool for about 10 minutes before serving.

Yield: 6 pieces

Note: if the pastry seems to be browning too fast, cover lightly with a piece of foil
