Cold Rice Paper Spring Rolls With Peanut Sauce


This Is An Easy Refreshing Dish That Not Only Tastes Amazing But Is Also Very Nutritious, When I Make These I Always Change Them Up So I Have Added A Link With A Method On How To Roll And Some Different Ingredients Ideas From What I Used In This Recipe, I Paired These Rolls With A Dry Rose Wine And It The Perfect Compliment.



Julienned Cucumber, Carrot, Celery And Red Peppers

Bean Sprouts

Vermicelli Noodles

Basil, Cilantro And Mint

Cooked Chicken, And/Or Mini Cooked Shrimp

Rice Paper


Lay out rice paper then herbs on the bottom of the roll

Next proteins and noodles, sprouts then veggies in the middle about 3/4 down on the rice paper.

Fold just the bottom up once, next the two sides then roll the spring roll up (tutorial video posted at bottom)

My Yummy Peanut Sauce Ingredients

¾ Cup Peanut Butter

1/3 Cup Water

3 Tablespoon Hoisin Sauce

2 Tablespoon Lime Juice

4 1/2 Teaspoon Soya Sauce

2 1/4 Teaspoon Chili Garlic Paste

1 Minced Garlic Clove

½ Teaspoon Sesame Oil

2 Tablespoon Brown Sugar (optional but so yummy)

Peanut Sauce Method

Whisk them all together and sprinkle with crushed peanuts.


If you are allergic to peanut sauce a nice sweet chilli sauce with a touch of brown sugar is fantastic as well.
