Maple Pecan Banana Loaves




1 Egg

1/2 Cup Original Miracle Whip Mayonnaise

1 1/3 Cups Mashed Bananas – About 3 Bananas

1 1/2 Cups Flour

1 Cup White Sugar

1 Teasspoon Baking Soda

1 Teaspoon Salt

1 Cup Chopped Pecans – Divided

4 Teaspoons Canadian Maple Syrup


Preheat oven to 350 degrees Fahrenheit.

Prepare 4 mini-loaf pans with baking spray.

In a large bowl, beat the Miracle whip with the mashed bananas-whisk to blend.

In another bowl, combine the flour, sugar, baking soda and salt.

Add to the banana mixture, stir until moistened.

Stir in half of the chopped pecans.

Pour 1/4 of the mixture into each of the mini-loaf pans.

Combine the remaining chopped pecans with the maple syrup.

Spoon the peacans and maple syrup over the batter.

Bake at 350 degrees Fahrenheit for 30-35 minutes until toothpick inserted into loaf, comes out clean.

Cool the bread in the pans for 10 minutes then remove from the pans to a cooling rack.
