Minestrone Soup Ingredients
2 Tablespoons Vegetable Oil
4 Slices Bacon, Chopped Into 1 Inch Pieces
3 Cloves Garlic, Minced Or Grated
1 Large Onion, Chopped
2 Large Stalks Of Celery, Chopped
1 Red Pepper, Diced
2 Large Carrots, Peeled And Diced
1 Pound Ground Pork
3 Hot Italian Sausages, Casings Removed
Italian Seasoning, Pinch
Dried Basil leaves, Pinch
1 Can Whole Tomatoes, Chopped
Salt and Pepper
2 Cans Campbell’s Italian wedding soup
1 Can chick peas, drained
1 Can Kidney Beans, Drained And Rinsed In Cold Water
3 Cups Savoy Cabbage, Shredded
2 Boxes, Low Sodium Chicken Stock
2 Cups Water
Minestrone Soup Method
In large deep pot, cook bacon.
Add vegetable oil, and saute garlic, onion,celery, red pepper and carrots.
Brown hot sausage and pork.
Add chopped cabbage, then chicken stock and water.
Bring to a boil, then lower heat to a simmer.
Cover and cook for at least 45 minutes, I let mine simmer for 3-4 Hours.
When cooled, pack into freezer containers or in litre canning jars and freeze.
