Nanaimo Bar Crust
1 Cup Semi-Sweet Chocolate Chips
1/4 Cup Hard Butter
1 Egg – Slightly Beaten
1 3/4 Cups Graham Cracker Crumbs
1/2 Cup Ground Almonds
Nanaimo Bar Filling
1/4 Cup Hard Butter
1 1/2 Cup Icing Sugar
1 Tablespoon Milk
1 Tablespoon Cherry Juice
1/2 Teaspoon Almond Extract
1/4 Cup Maraschino Cherries – Chopped And Well Drained
1/4 Cup Dessicated Coconut
Nanaimo Bar Glaze
3/4 Cup Semi – Sweet Chocolate Chips
2 Tablespoons Hard Butter
Crust Method
Prepare 8 x 8 inch baking pan with foil
In a small bowl melt chocolate chips and butter over hot water-remove from heat
Stir in egg
Add graham cracker crumbs and almonds
Press evenly into foil-lined pan
Chill in refrigerator
Filling Method
In a bowl, beat butter, icing sugar, almond extract until creamy
Add milk and cherry juice
Stir in chopped maraschino cherries and coconut
Spread over bottom layer
Chill in refrigerator
Glaze Method
Melt chocolate chips and hard butter over hot water
Spread over cherry layer
Chill at least 2 hours before serving
Lift from pan
Remove foil
Cut into squares
Store in airtight container
Makes Approximately 16 Squares
