Apple And Sultana Breakfast Muffins




1 Egg

125 Grams Softened Butter

3/4 Cup Of Raw Sugar

2 Cups Of Flour

3 Tablespoons Of Baking Powder

1 Teaspoon Of Nutmeg

1 Teaspoon Of Cinnamon

3 Granny Smith Apples

1 Cup Of Golden Sultanas

2 Tablespoons Of Pure Vanilla Essence

3/4 Cup Of Milk


Take Note – 3 Medium Size Mixing Bowls And Muffin Trays With Paper Liners Are Required

Sift Flour, Nutmeg, Cinnamon And Baking Powder Together In Bowl

In A Separate Bowl Cream The Butter, Sugar And Egg Together Until Smooth

Peel, Core And Dice The Apples In The Third Bowl Then Add The Sultanas

Add The Flour, Cinnamon, Nutmeg And Baking Powder Alternately With The Milk To Creamed Mixture Then Add The Apples And Sultanas

Mix Until Just Combined

Spoon Into Prelined Muffin Trays, Fill The Cups 7/8 Full

Bake At 350F For 18 – 20 Minutes

Allow To Sit For 5 Minutes Then Remove From Tins And Allow To Cool On Racks
