4 Tablespoons Of Butter

1 Cup Packed With Brown Sugar

1 Egg

1 1/2 Cups Of Gluten Free Flour

1/2 Teaspoons Of Salt

1 Teaspoon Of Baking Powder

1 Teaspoon Of Baking Soda

3 Ripe Bananas

1/2 Cup Of Chopped Nuts – Pecans Or Walnuts


Preheat the oven to  350 degrees Fahrenheit.

Prepare a loaf tin lined with parchment paper.

Cream together the butter and sugar.

Beat the egg then add to the creamed butter and sugar.

Beat the mixture till light and fluffy.

Sift together the flour, baking powder, salt and baking soda.

Mash the bananas with fork.

Add alternately the flour and bananas to the butter mixture.

Fold in the nuts.

Pour into a prepared loaf pan.

Bake at 350 degrees for 60 minutes.

Note: If using glass loaf pan, only bake at 325 degrees Fahrenheit.

When just out of the oven, while still hot, make a delicious glaze by mixing white sugar and lemon juice in a small bowl and brushing it all over the loaf top.
