2 Cups Packed Fresh Organic Spinach
1/2 Cup Organic Cucumber With Skin Washed And Chopped
1 Frozen Banana Chopped – See Below For A Handy Tip
1/2 Cup Cubed, Fresh Pineapple
1/2 Inch Fresh Ginger, Grated About The Size Of A Thumbnail
1 Cup Pure Coconut Water Either Fresh Or Store Bought – I Use O.N.E. Brand
Combine all ingredients in a high speed blender – I love my Vitamix for this, it obliterates the spinach and any frozen fruit.
Blend until smooth and creamy, may need to be scraped down.
Add more coconut water if needed to reach desired thickness.
When you purchase bananas, buy extra and once they reach your preferred ripeness – either with a bit of green on the tips, or with some brown spots, your choice.
Peel them and cut them into 1/2 – 1 inch slices, ensuring each banana is cut into the same number of slices (for me it’s 12 for a medium banana).
Place the slices on parchment lined cookie sheet in a single layer, trying not to let them touch.
Cover with another sheet of parchment paper and set in freezer for a few hours or overnight.
Once frozen pop them off the cookie sheet and into a freezer bag or container.
Now they are easy to grab for a smoothie. I write on a piece of tape on the container how many slices equal one banana.
Frozen banana adds a cool creaminess to smoothies, you can omit and just use a regular banana from the fruit basket if that’s all you have.
